GrecoSoCo Greens, Beans & Middlins

Middlins? Yes, middlins, the broken pieces of rice collected during the processing of Carolina Gold Rice. My friends at Marsh Hen Mill in Edisto, South Carolina, like to work backwards in a way that preserves tradition and a simpler way of processing beans and grains, cornmeal, grits and rice. I love these guys! Yes, it's a business, but as Greg Johnsman tells it, the business is made up of people and "these people are family." Greg loves to share stories. One of his favorites is when he references that he has children, but that "these people--they are my family too." Greg is referring to his employees, and his sentiment is sincere. Greg and his wife, Betsy, have a history with the land, and they share a love of family and faith in a kind and generous Creator. The back of each packet of goods that comes from Marsh Hen Mill features this bible verse, He will cover you with his feathers. He will shelter you with His wings. His faithful promises are your armor and protection.


Greg and Betsy are authentic.
They are as bound to the lowcountry of South Carolina as much as any of the crops that they grow and mill. I will tell their story another time, but today I want to share a recipe that I'm very excited about. It's another of my GrecoSoCo creations using Marsh Hen Mill's Carolina Gold Middlins.

Drizzle with a touch of fresh lemon juice and a generous amount of good olive oil

Delicious Miss Brown is a Food Network cooking show hosted by Kardea Brown who was born in Charleston and has family roots in Edisto. She cooks in a house on Edisto Island, and she is a big fan of Marsh Hen Mill products also. In fact, Kardea has a risotto recipe featuring MHM middlins.
