Turnkey Turkey Pot Pie

I call this dish Turnkey Turkey Pot Pie, because it's that easy, even though you do have to do a teeny bit of work. Maybe it's more like Easy as Pie Turkey Pie. Hmmm...let's see.

2 flat pre-made pie crusts (2 rolls in one pack)*
2 tablespoons of butter
3 tablespoons of all-purpose flour
1 cup milk or half and half, heated
1 teaspoon chopped fresh sage
1 teaspoon chopped parsley
2-3 cups cubed pre-cooked turkey**
1 cup frozen peas
2-3 hard-boiled eggs, diced or sliced or cut into thin wedges
1 large egg and 1 teaspoon milk, whisked well (to glaze pie top)

  1. You unroll  and roll out the pie dough
  2. You make a roux*** and stir in the herbs
  3. You dump in the turkey, hard-boiled eggs and a few frozen peas.
  4. You pour all of that into the pie dish or casserole and put on the top crust
  5. You crimp the edges and brush with the egg mixture
  6. You set in a preheated 400F oven and cook for 30 to 45 minutes


*Not frozen. Found in dairy section of most grocery stores.
**You can substitute roasted chicken for the turkey
***To make roux, melt butter in a pan, stir in all of the flour and cook for about a minute. Swap your spoon for a whisk. Pour in one cup of milk and whisk away to incorporate milk. Keep doing this until you've used all of the milk and the mixture has thickened. Remove from heat and stir in the herbs.

Almost turnkey. Maybe as easy as pie? You decide.
