A Connecticut Yankee Cooks in the modern South
Our wonderful son-in-law Dan is a Connecticut Yankee living in the modern South. Transplanted to a warmer climate about ten years ago, he married my stepdaughter Emme, and is now fully adapted to the easier weather of the South Carolina coast. He also cooks and eats his share of grits and collards. Dan even saw the light and transitioned from Hellman's to Duke's mayonnaise, as anyone in their right mind eventually does. A true foodie. One of the things we love most about Dan is his appreciation of good food. He shares that with us and with Emme. Fortunately for Emme, Dan also loves to cook for his family.
From the frying pan into the fire. For Dan, having grown up in Connecticut, eating Italian was just like breathing air. "Everyone's mom was a great Italian cook. Pretty much all my friends were Italian," Dan says. He learned to cook the Italian-American food he loves so much by asking questions and paying attention to how his friends' mothers were cooking. Additionally, his job waiting tables at a neighborhood Italian restaurant forced him into the kitchen during the busiest service times. "We all had to help out in the kitchen," Dan says, "which was really helpful because that's where I learned to cook some of these classic dishes."
On a recent visit that Dewey and I made to meet their newest baby girl, Delilah, Dan prepared one of Emme's favorite dishes, chicken cutlet sandwiches. Dan shared his recipe and method with me. We had a wonderful lunch. You can have a wonderful lunch, too, using Dan's recipe. Here it is!
The real Family Guy! After serving us and halfway through our sandwich-eating, Dan picked up Delilah and fed her too, although it was a slightly different meal. At three weeks old, she was not quite ready to transition to chicken!
