#FastFoodFriday Clean the Fridge Frittata

One of the easiest and most versatile dishes in just about any kitchen is the frittata, a free-for-all egg-based dish. This is where you can use your creativity because there is no right or wrong way, which is an EGGcellent way to clean out your refrigerator. It's a great breakfast dish, but it's also an amazing dish for dinner. I like to top it with a salad of arugula, red onion, crumbled gorgonzola tossed in a classic vinaigrette. And there's dinner and your refrigerator cleaned out!

Again, I must say, this is a versatile and easy dish to prepare. You can customize it to suit you and your family. The combination of ingredients is entirely up to you and to the availability of ingredients in your refrigerator. For this one, I had breakfast sausage, peppers, onion, diced tomatoes and a couple of different cheeses.  You can chop up sandwich meats, use slices of leftover steak, that little piece of salmon from dinner four nights ago...pretty much anything.

For a small frittata like the one that I made, use three eggs and a small pan. To feed your family, use 10 to 12 eggs and a much larger pan.

Whip the eggs with salt and pepper. Turn your broiler on high and move a rack to just below the element.

Heat your pan with a generous amount of oil and toss in all of the "leftovers" except for any cheeses and give the pan a shake. You just want to heat things up a bit.

Pour in the eggs and give the pan a swirl.


Now top everything with the cheese and wait for the eggs to set. When they're almost done--set on the bottom and middle--move the pan to the broiler, but do keep an eye on things. *


When the top has set and puffed up a bit, slide the frittata onto a plate or large cutting board and top with fresh herbs or that lovely salad.

*If you're making a large frittata, turn on the oven to 450F instead of using the broiler. It will take anywhere from five to ten minutes for the frittata to puff up and set, possibly longer if you pulled it off the stove a little early.
