Low Carb Eating OR Sandwiches Without Bread

Is it a salad? Is it a sandwich? Yes! Okay, but where's the bread? The bread is still in the bag. In the bag? Yes, because we didn't use it. This sandwich is made with eggs. Are you confused? Read on.

This is the easiest and fastest meal that I've ever prepared. Okay, I say that a lot, but this is too easy to prepare, that even your kids can do this on their own. First, you make a very thin egg pancake. Call it an omelet if you wish, but it's just like a very thin pancake or a crepe...there's just no flour in the mix. Then you mix a tiny salad, dress it with vinaigrette and use it to stuff the crepe-like omelet. Cut it in half, add a little more dressing, and there's your sandwich, er, salad, uhm, salwich? Whatever you call it, however you look at it, whichever category you want to add it to, it's delicious and you'll want to eat it.

For One Salwich:
1 egg
pinch of salt and pepper
1 teaspoon chopped parsley (or chives or basil or cilantro)
a pat of butter for cooking
shredded cheddar and grated parmesan for topping

Whisk together the egg, salt, pepper and parlsey. In a small non-stick pan, melt the butter. Now quickly: pour in the eggs, lift the pan and swirl or rotate (whatever you call it) the pan to get the egg evenly distributed. Set the pan back on the stove. Once it's almost fully set, flip the crepe and lightly cook the other side. Gently slide onto a plate and sprinkle lightly with the cheeses.

The Filling:
Two large red leaf lettuce leaves, cut into ribbons
2 tablespoons chopped red onion (more if you wish)
handful of carrot ribbons (use a peeler to run the length of the carrot)
2 tablespoons shaved asparagus (cut the tips of then shave the stem diagonally)
1 tablespoon diced tomatoes

Toss with two tablespoons of my vinaigrette and roll with crepe:
Whisk together 1 tablespoon Dijon mustard with 2 tablespoons white wine vinegar. Add a generous pinch of salt and one of freshly ground pepper. Now whisk in 4 to 6 tablespoons of extra-virgin olive oil.

Other filling ingredients:
Sliced spring onion, shaved radishes, chopped or sliced olives, zoodles, fresh herbs, capers, thinly sliced cucumber, diced beets. You decide. It's your filling and your salwich.
