Taco Tuesday With Leftovers and Rick Bayless
Happy TACO TUESDAY!
Mostly, I use leftovers on Taco Tuesday. It's just the easiest way to clean out the refrigerator and get your taco fix. You can top off most leftovers with your favorite salsa, some shredded cheese or queso fresco, a little dab of sour cream and a few crunchy salad items like lettuce, cabbage, onion, peppers, green onions, chopped cucumbers and so on. It's entirely up to you.

A super-healthy taco version for my vegan, vegetarian and low-carb friends uses lettuce instead of a tortilla and Roots Hummus for the protein. You fill it up with all kinds of flavor- and crunch-packed veggies including zucchini and carrot "noodles" and thinly sliced raw asparagus.
How about this grilled or pan-seared flank steak with chimichurri sauce? Heat up your tortillas and load up just with this deliciousness for a full-flavored meat out dinner. You can also top it off with a few sliced green onions for added bite and crunch.
The truth of Taco Tuesday is that you can put anything onto a tortilla and call it a taco. It's all about what you want--just like a sandwich. Here are some ideas: Cold lobster with shaved red onion, mayonnaise and chopped dill. Roasted vegetables with chimichurri sauce. Diced or sliced leftover pork chops with mashed pinto beans, chopped red onion, cilantro and a drizzle of red wine vinegar and olive oil. You can even add a bit of those collard greens if you've got some left from Sunday's dinner! Greek salad and tzatziki sauce...maybe with some sliced roasted lamb, if you have it. Or, you can go completely crazy and load up your tortilla with a chopped version of a wedge salad, flaked salmon, a few diced fresh tomatoes and your adventurous spirit!
