Sablefish Mediterranean Style

This is one of the most delicious and satisfying dishes I’ve ever cooked. Having fresh and quality ingredients makes a huge difference. I used Sablefish, also known as Butterfish or Black Cod, can be found fresh and wild-caught at my Sam's Club in Greenville, South Carolina. This was my first time trying Sablefish. If I'd known just how delicious it is, I would have bought up all they had. You may not be able to find this delicate and delicious fish, but my recipe will also work well with cod or tilapia. Typically, I don't use tilapia because it offers no flavor, and it's farm-raised. Chilean Sea Bass would be wonderful also, and you can try it with salmon, although it has a stronger flavor.

Sablefish comes from Alaskan waters and is low in Mercury but high in omega-3s. While the flavor is delicate, it is notable and contributes much to this recipe. For my printable recipe, click here.






Once you have all of the vegetables prepped, this dish comes together in about 15 minutes. Cut each filet down the natural line running lengthwise. When the vegetables are almost fork tender, set the fish on top, season and cover. In 3 to 5 minutes, pulling out the smaller pieces of fish early, you will have dinner on the table. Just time enough to uncork a bottle of white wine like an unoaked Chardonnay. Cheers! Bon Appetit!
