Golden Forest Farms Mixed Carrot Bake



Golden Forest Farms is a local farm to table supplier where we live. In the midst of this pandemic, they also became an excellent once-a-week delivery service. Everything looks wonderful, and sometimes I get carried away ordering vegetables for two people. Remarkably, though, even after two weeks in the refrigerator, my local and lovingly grown vegetables still look as fresh and firm as the day they were delivered, which is a good thing because I served them to friends last weekend. We had dinner outside on the patio with appropriate social distancing and hand sanitizer prior to passing plates around and so on. 

We're all  (most of us) trying to be good and responsible citizens, friends and neighbors. We wear masks when we go to restaurants, taking them off just to eat and drink. We wash our hands, wear the darned masks in public and use hand sanitizer when soap and water are not available. We respect the wishes of others when we are together with friends and we cook more at home, keeping ourselves to some sort of distanced isolation from people that we normally socialize with. Yes, we're still having BYOE happy hour. BYOE=Bring Your Own Everything. Not ideal, but safe and it's still a good way to continue to visit with people whose company we enjoy.

If you're like us, me and my Dewey, then you're continuing to cook more at home too. If you can source true baby carrots (carrots at the early stages of growth), then you're in luck, but if they're not available to you, use adult carrots and a couple of small beets--surprisingly sweet when roasted. In this mix I've also used sweet potatoes and Japanese (or salad or Hakurei) turnips. If you can't find these small tender-crisp turnips try using radishes or parsnips.



The hardest part of this recipe is peeling the baby carrots. They're cute, but that's a lot of peeling effort, so do it while you're binge-watching your newest Netflix addiction. See how easy that was?
