ASPARAGUS WITH VINAIGRETTE & TOASTED ALMONDS


This one is a favorite of mine from the fabulous Ina Garten. She uses the dressing on her endive and Roquefort salad. I use it over asparagus. It's easy and so delicious.  I cook the asparagus ahead of time and bring them out of the refrigerator about one hour before whisking together the vinaigrette. The almonds are lightly toasted in a non-stick pan. For a quick dinner, you can pan-sear or poach chicken breasts, top with the asparagus and dress generously with the vinaigrette.
