Fritters or Pancakes?

Here's a conflicted recipe--Greek Style Broccoli Fritters. But maybe it's pancakes? I'll give you the recipe, and you can try it your way. What am I trying to say? The recipe is the same whichever way you lean. One of the steps is a little different. If you want fritters, you leave the broccoli a little chunky. If you want something a bit more refined looking, you put everything in a food processor. The broccoli will be smaller pieces, and come together with the flour and eggs for a smoother batter. That's it! Just like peanut butter. You want it chunky or creamy. It all depends on your mood and presentation. If you want a pretty brunch dish, it's pancakes--stacked and topped with a fried egg. If you want an easy finger food for a cocktail party or picnic, go chunky. Here's the recipe.

Pancake Version - So Elegant!

You've got this. Gather all of the ingredients--maybe even precook your broccoli the night before--chop the veg, toss it all in a bowl and cook it up in a non-stick pan with a light drizzle of olive oil. How incredibly easy is that?

Can it be easier? Why, yes, it can. After cooking and cooling the broccoli, throw everything into a food processor and pulse until combined. Done! Well, you still have to cook the pancakes, but that's a given.
