Steak and Eggs...and a Salad

Who hasn't had breakfast for dinner? Here, in South Carolina, we've all packed in at a busy open-24-hours Waffle House for an after-party meal. Waffles, fried eggs, bacon, steak and lavishly buttered toast are examples of comfort food that it's okay to eat TOGETHER and at the same time, but only a couple of times a year...or less.

Breakfast for dinner

When I have breakfast for dinner, I want a thin ribeye steak and two fried eggs. Salt. Pepper. Dry toast for dipping into the luscious and creamy yolk. And I want a salad of simple greens dressed lightly with vinaigrette. This link will take you to my recipe for a green salad with vinaigrette. The green and tart salad seems like the best match for the rich and meaty mouth-coating action of the steak and eggs. A heavenly match that you shouldn't fool around with. 


So delicate and yet assertive enough to stand up to the richness of the steak and eggs.

While the green salad goes hand-in-hand with steak and fried eggs, I must admit that my favorite part of eating this meal is dipping the toast into the egg yoks and delivering it to my anxious taste buds. This is an expedited delivery and cannot be pulled over for speeding. Uh-uh! Nope. Got to get that luscious yolky yumm to the right address and now! Phew! That was close.
